Lemon Shortbread

 
 
Petang ini ada masa terluang dan butter pun masih ada noor pun teringat nak buat Lemon shortbread ini. Mulanya terfikir nak buat kuih tradisional tapi kalau di rumah nie kurang sikit perminat kalau biskut tu cepat pula habis. Biskut ini di ambil dalam buku Alex Goh. Sedap dan simple tapi kalau nak rasa lebih buttery kena guna butter scs ataupun devondale lagi kick. Biskut ini sesuai untuk minum petang dengan air teh. Wow enak sangat.
Resepi untuk Orange nie noor tukar jadi lemon sebab noor guna lemon.




Orange Shortbread


100g butter
50 g sugar
1 tbsp orange juice
Zest of 1 orange finely grated
170 g flour
20 g cornflour

Method:
1. Cream butter and sugar till light. Then add in orange juice and zest and mix till well blended.
2. Fold in the sieved flours and mix till well combined.
3. Roll it between 2 plastic sheets to a 5-mm thickness cut it with 7.5-cm round cutter.
4. Place the cut dough into greased pan. Poke some hole with a fork and sprinkle some sugar on top.
5. Bake at 170c for 20-25 min till lightly golden.


Tips; Orange zest and juice can be replaced with lemon zest and juice or with milk as you like.
