Lemon Cheese Tartlets

 
 


Dah lama juga tak makan kuih sebegini. Lihat dalam buku masakan tart ini nampak macam sedap aje. Lantaran nak rasa adakah ianya sedap kena lah cuba dulu. Bila dah buat makan hanya 2 keping saja nak makan banyak tak boleh sebab rasa full tak boleh makan dah. Lebihan tart ini boleh di buat bekal yon yon ke sekolah esuk. Dalam satu adunan boleh dapat lebih 16 keping tart.

Lemon Cheese Tartlets

PASTRY
1 cup all-purpose flour
Pinch of salt
6 tbsp (90ml) butter
Squeeze lemon juice
1 egg yolk

FILLING
½ cup sugar
3 tbsp cornstarch
3 tbsp flour
2/3 cup ( 165ml ) water
2 egg yolk
Grated rind of 1 lemon
3 tbsp (45ml ) butter
1/3 cup (85ml) lemon juice

Preparation:
Preheat oven to 230 c. Sift flour and salt in a bowl. Rub in butter. Add lemon juice and egg yolk to form a dough. Knead on lightly floured board. Roll out dough till 1/8 inch (3mm). cut with fluted cookie cutter into 2 inch (5 cm) rounds.
Line tart tins with pastry rounds. Prick base and sides of the pastry shells. Bake for 8-10 mins . Cool on the rack and pour the lemon filling and bake for another 6-8 min.
Allow to cool completely before serve.


Filling ( to make before hand )

To make filling combine sugar, cornstarch, flour and water. Stir over low heat until mixture simmers and thickens. Remove from heat. Add yolk, lemon rind, butter and lemon juice. Set aside to cool Spoon lemon cheese mixture into tart shells.
